My family gets so tired of Turkey sandwiches after Christmas but I can't bring myself to buy a smaller Turkey (I love Turkey sandwiches) any suggestions on what else to do with the leftovers?

Perfect timing on your question! Today I was on Indy Style TV, and I used cubed dark turkey meat to make turkey stroganoff. A lot of people don't like dark turkey meat, but I think that's because it tastes so different from the breast meat that it's just a shock to our taste buds. One day I realized that the leg and thigh meat looked a lot more like beef than poultry, and I started cubing the dark meat and using it in beef recipes, such as stroganoff. We made a casserole with leftover turkey, dressing and gravy. It was good but a little more soupy than intended.

We've done that too -- and added broccoli! We also added more dry bread crumbs. It was really great!

My favorite thing to do with turkey leftovers is make a cold salad by cutting up pieces of turkey and adding: chopped celery, green onion, chopped apples, raisins, walnuts, mayonnaise, tons of curry, salt/pepper all to taste. It's really good the next day. I vary the ingredients all the time (sometimes add sliced grapes, dried cranberry, etc.) You won't be disappointed, and you'll be surprised how fast those leftovers vanish!
